As everyone knows, the team behind the scenes is what makes the magic happen, and we count ourselves very lucky to have a stellar team working full-time in our commissary, producing the highest quality, original culinary creations.  

We’ve chosen the month of March to introduce you to our chefs; they bring to the table (pardon the pun) years of experience at prestigious venues, serving an impressive array of A-list clients. A gourmet dinner for 6 or a gala for 600, no problem, week after week the chefs bring menus to life for our clients.

Executive Sous Chef, Michael Finizia, joined Thierry Isambert Culinary and Event Design two years ago. His talent and commitment never cease to amaze! Michael’s passion has always been the kitchen; encouraged by his parents from a very young age, Michael developed skills that led to a successful career creating memorable dining experiences.

Michael has often partnered with celebrity chefs such as Michele Bernstein, Daniel Boulud, Chef Frederik Berslius, Chef Emeril Lagasse and Chef Nick Nicholas.

Celebrity guests who have enjoyed Michael’s cuisine include Sean Connery, Paul McCartney, John Travolta, Jon Bon Jovi, Chris Bosh, Chris Andersen, Pit Bull, Steve Aoki, Bill and Hillary Clinton and George Bush Jr, to name a few! 

Michael graduated from the Johnson & Wales Culinary Arts Program, immediately landing a position as Sous Chef and Assistant Banquet Chef at the Grand Bay Hotel in Coconut Grove, FL. This led to the “Terrace Café” at the Ritz Carlton in Naples, FL, where he filled the role of Restaurant Sous Chef, and later, a promotion to Sous Chef at The Ritz Carlton’s “Grill Room.”

The hotel experience he acquired right out of school led to Michael opening and managing privately owned restaurants, The Aqua Grill and Mia’s, in the historic Old Hyde Park neighborhood of Tampa, FL. During this period, he made frequent live TV appearances and cooking demonstrations.

After his stint in Naples, Michael returned to Miami to join Pascal’s on Ponce in Coral Gables, working as Sous Chef alongside renowned chef, Pascal Oudin. Here, Michael developed a passion and talent for French Cuisine and a mastery of classical culinary techniques.
